My great-grandma, Anna Fisher, passed down her chocolate refrigerator cookies that have been a favorite for five generations. These cookies, with their lovely combination of chocolate and cinnamon, were made only for Christmas. They are little medallions of flavor that my sons especially look forward to receiving. A handful goes great with a glass of milk. Grandma Anna died when my mother was nine years old, but her spirit lives on in the savory and memorable cookies she invented.
Recipe
1 cup white sugar
1 cup brown sugar
1 cup butter (softened)
½ cup baking cocoa
3 eggs
1 teaspoon soda
1 teaspoon cinnamon
½ teaspoon salt
4 cups all-purpose flour
1 cup chopped nuts
1. Beat together the sugars and butter.
2. Add the eggs.
3. Mix the flour, cocoa, soda, salt, and cinnamon together and add to wet ingredients.
4. Add the nuts. You may have to use your hands to blend in the flour if your mixer quits.
5. Take a quarter of the dough and roll it out on a floured board to about 1 ½ inches in diameter. Make four, 12-inch rolls and wrap in 6-inch strips of wax paper.
6. Place in a cake pan and refrigerate or freeze for two hours or more.
7. Slice rolls into quarter-inch segments and place on a cookie sheet.
8. Bake in 350-degree oven for 8-10 minutes.
9. Cool on a baking rack and enjoy!
